Making a very unique and inventive twist on common fish and chips has put Mitchelstown CBS student Fergal Fouhy in the national final of the ‘Take Away My Way’ competition.

Making a very unique and inventive twist on common fish and chips has put Mitchelstown CBS student Fergal Fouhy in the national final of the 'Take Away My Way' competition, which will be judged by chef Nevin Maguire on this Thursday.

Fergal who is from Kildorrery, is one of just 35 students from across the country to have gotten through to the final of the competition, which received 1,200 applications.

The applicants were given the task of making a common take-away dish healthy and tasty and Fergal came up with a mouth watering idea for spicy Ballycotton salmon fishcakes with super green quinoa salad, cucumber raita and coriander pesto.

Speaking to The Avondhu, the fifth year student said that at first he thought the task would be really challenging, as he assumed that take-away would have to be unhealthy. "But anything can constitute take-away when you give it a little thought and there is no reason for convenience food being unhealthy," he said.

Fergal thanked his teacher Laura Healy for all of her help, as she helped him to modify the recipe as he went along.

While he said that he is not nervous about cooking, as he is confident with the dish, Fergal said that he is glad that he has an hour to set up, as he will need to get used to the different oven, cooking equipment and changed environment.

Fermoy student, Marian Walsh from Loreto Secondary School, was in Sligo on Wednesday to compete in the junior category with her dish, chicken jalfrezi with brown rice and a cucumber dip.

The winner will get to visit Nevin Maguire's cookery school in Cavan with their whole class; their teacher will get an equipment voucher and also an Amazon voucher and there is also an iPad up for grabs.
