Michael Horgan, Managing Director of Horgans Delicatessen Supplies Limited, Mitchelstown, stated that he was absolutely delighted to receive a Gold Award at the recent Blas na hÉireann National Irish Food Awards in Dingle. Horgans scooped a Gold Award for their authentic New York Style Pastrami.
Horgans New York Style Pastrami has been developed by Michael Horgan, taking inspiration from famous New York delis and using the finest quality Irish beef. Michael visited the iconic Katz deli in New York where he carefully observed the entire process, before bringing the knowledge back home and perfecting his own recipe.
The process involves slowly curing brisket of beef in brine, the meat is then carefully covered in a blend of secret spices, and steam cooked for succulence. Finally, the beef is gently smoked over wood chips for added flavour.
Winning a Gold Award at such a prestigious competition as Blas Na hÉireann is significant for Horgans.
